Brett Knipmeyer of Kinley’s Restaurant & Bar will be our guest chef for the 2010 Copper River Nouveau! After graduating from the Western Culinary Institute in Portland, Oregon, Chef Knipmeyer returned to Chicago for a stint at the world renowned Charlie Trotter's. After moving to Alaska to be the head chef at Jens’s Restaurant, Brett has now staked his own culinary claim, and named it after his daughter, Kinley.

Cilantro-crusted Copper River king salmon with a brown sugar glaze & sambal lime aioli
Fresh oysters on the half-shell with a pineapple-Serrano-sake mignonette
Alaskan prawns with an orange-tomato- horseradish & a tarragon-anchovy dipping sauces

Maschio Prosecco Brut

Chili-dusted halibut cheeks on an avocado salad with baby greens, grape tomatoes, red onion, fresh berries & a strawberry vinaigrette

Clean Slate Riesling

Carrot, ginger & coconut bisque with seared Kodiak scallop

Chateau St. Jean Fumé Blanc

Seared Copper River sockeye salmon on a beurre noisette with a Yukon Gold potato puree, sautéed mushrooms, bacon & mustard greens topped with toasted pecans & drizzled with a maple-infused honey

Bogle Russian River Pinot Noir

Flourless chocolate torte with créme anglaise & raspberry coulis
